Local and seasonal ingredients exclusively from South Tyrolean farms, along with time-honoured farming recipes reinterpreted by select culinary professionals, all enjoyed in an unmistakably rustic atmosphere: at the Red Rooster Cookery School, you don’t just experience culinary delights – you also gain an appreciation for local ingredients and farm cuisine.
The heart of these events is the seasonal raw produce from South Tyrolean farms. In close collaboration with the cooking school’s chefs, menus are developed according to the time of year. The ingredients list depends on what the surrounding farms currently have available.
These farm products are prepared according to age-old recipes, but with a fresh, innovative twist, resulting in four dishes that perfectly complement one another.
During the culinary evening, participants are guided by selected chefs who are intimately familiar with South Tyrol’s regional cuisine. In the kitchen, they explain each step in detail, offering new inspiration for both familiar and lesser-known dishes, as well as handy tips and tricks.
Anyone who wishes to can lend a hand. After each dish is ready, all the guests sit down together to enjoy what they have prepared themselves, paired with a suitable wine. Then it’s on to the next course, and a total of four courses will be created and savoured.
The cooking events take place at Föhrnerhof, just a few minutes above Bozen. There, Red Rooster – together with farmer Karin Bracchetti and her family – welcomes guests in the historic parlours of the former “Buschenschank” (farm tavern).
